No-Bake Cookies
Ingredients:
8 whole-wheat graham cracker squares, finely ground
1/4 cup raisins
1/4 cup smooth natural peanut butter
2 tablespoons honey plus
2 teaspoons honey
4 tablespoons unsweetened coconut

Cooking Directions:
Combine ground whole-wheat graham crackers, raisins, peanut butter and honey in a small bowl. Pat into 16 cookies and press lightly in coconut.

Yield: 4 servings (Yeah right!)

Here's another one;

Crunchy Vanilla Clusters

3 oz. package ramen noodles
1/4 cup pecan pieces
1/2 cup sliced almonds
2 tablespoons butter melted
12 oz. white chocolate or vanilla morsels

Gently crush ramen noodles before opening package. Open package and discard flavoring packet. Saute crushed noodles, pecans, and almonds in butter in a large skillet over medium heat until toasted, taking care not to crush noodles too finely while sauteing. Pour noodle mixture into a large bowl to cool. Melt white chocolate morsels according to package directions. Pour chocolate over cooled noodle mixture tossing gently to coat. Drop mixture by rounded tablespoonfuls onto wax paper; let stand until firm, about 45 minutes. Store in airtight container at room temperature.

Oatmeal Peanut Butter Clusters

2 cups sugar
1/2 cup Butter
2/3 cup evaporated milk (5 oz. can)
Boil and stir over medium heat 3 minutes

Remove from heat and stir in
1/2 cup peanut butter, creamy or crunchy
1 tsp. vanilla
1/4 tsp. salt
2 cups oatmeal, quick cooking or old fashioned (not instant)
1 cup chopped peanuts (optional)

Drop by spoonfuls on foil or waxed paper. Sets up quickly.

The oatmeal makes them a little bit healthy! winky.gif

Sheech, don't get me started Donna. I have 5 (4inch) binders loaded with recipes (I LOVE to cook/bbq). Being diabetic, .....almost all my recipes are more entree ones though.

No kidding Doug and here I'm thinking this was NOT the week to start a weight loss program. Sigh...all these recipes sound YUMMY!

Classic Chocolate Oatmeals

I am a freewheelin' sort of cook, so the proportions are flexible. Makes lots.

2 cups white sugar
1/4 cup cocoa
1/2 cup butter
1/2 cup milk
good pinch of salt
bring to a boil for a minute or two, then remove from heat and add
1/2 cup shredded (or whatever) coconut
maybe 3 cups quick oats (3 minute kind) - add more if too goopy, less if too oat-y looking
1/2 tsp vanilla (optional)

Stir well, then plop onto wax paper in globs until cool

It's two TABLESPOONS honey, plus two TEASPOONS honey. 53.gif

These guys are yummy! I like chopped nuts instead of coconut...
