Apple Cheesecake

Crust:
1/2 cup butter
1/2 tsp vanilla extract
1 cup flour
1/4 cup sugar

Filling:
8 oz light cream cheese
1 egg
1/2 tsp vanilla
1/4 cup sugar

Topping:
1/4 cup sugar
1/2 tsp cinnamon
Pinch nutmeg
4 cups sliced apples
1/4 cup sliced almonds

Preheat oven to 450 degrees

Crust:
Cream butter and sugar together until fluffy and add vanilla. Blend in flour 1/4 cup at a time until incorporated. Spread on bottom and part way up the sides of a non-stick springform pan.

Filling:
Beat cream cheese until light and fluffy. Add egg vanilla and sugar and beat until all is mixed well. A couple of small lumps of cream cheese are nothing to worry about. Pour into pan on top of crust.

Topping:
Peel and slice apples. Mix with sugar, cinnamon and nutmeg. Layer the slices on top of the cheese mixture in the pan. Evenly sprinkle the sliced almonds on top.

Bake in preheated oven for 10 minutes then lower heat to 400 degrees. Continue to bake for a further 25-30 minutes.

Be careful not to tip cake or the apple juice will slip between the pan and the crust and burn.


Note: we arrived late to the potluck so if you were at the front of the line, you didn't even see this one (and there were two!)

Alf S's Slo Cooker Baked Beans

Sauce
2 tsp dry mustard
3 tsp's vinegar
1/2 cup of Beer(reg or dark)
1/2 cup ketchup
1/2 cup brn sugar
heat gently till sugar disolves
1 1/2 lbs of ground pork(pre fried till pink is gone)
1/2 lb. bacon(1"pieces pre fried to reduce fat)
1 chopped Spanish onion(large)
1 lg can red Kidney Beans(rinsed)
2 cans Butter Beans
2 cans Beans w/ tomato sauce

Combine in Slo Cooker set to low and stir occasionally.
Cook all day & try to resist the "TEMPTATION" to sample 31.gif 31.gif 31.gif

Sorry I am late in responding.... summer has been too busy over here....

Couscous salad (sorry for my lack of measurements)

Prepare couscous ahead of time with hot water and curry powder, garlic powder... and I sometimes use cumin too....

set aside to cool. Chop shallots, peppers or all colors, lots of fresh corriander (cilantro)

Add chopped vegs to the now cooled cooked cous cous and add fresh lemon juice (I usually add the juice of 2 full lemons).. a bit of olive oil, salt and pepper and voila!
