I just wanted to let everyone know that we had a good time in Lanesboro & wanted to share my recipe with everyone who liked it!
Add 1 cup of milk to a small package of vanilla instant pudding & whisk until not lumpy. Add 1 8oz tub of cool whip & 1 small can of mandarin oranges (drained). Mix until blended, top with 16 crushed fudge striped shortbread cookies. Let set a few hours before serving.

Sounds yummy. 
But isn't Cookie Salad an oxymoron? Where's the greens? I know... make it with Pistachio pudding and add pineapple instead of oranges.... wonder if I could convince my doctor that I WAS eating salad
