Ingredients:
one medium size grated zucchini
one beaten egg
2 Tablespoons chopped yellow onion
1/4 cup all-purpose flour
1 Tablespoon fresh grated Parmesan cheese
1 Tablespoon grated Monterrey Jack cheese
Salt and pepper to taste
Directions:
Combine the above ingredients
Heat olive oil in a medium skillet over medium-high heat.
Drop zucchini mixture by tablespoonfuls, and cook for 2 minutes on each side, until golden
Top patties with grated jack, and chopped green onions
Serve with curry mayo
Curry Mayonnaise Recipe:
* 1 cup bottled mayonnaise
* 2 teaspoons curry powder
* 1 tablespoon fresh lime juice
* 1/8 teaspoon cayenne
* paprika for garnish

Wow, Donna - how'd I miss this recipe? I LOVE most any dish involving zuccini and this is one is Egg-friendly for our small kitchens! Gonna try it soon -

OMG is right! I had to walk away to reply or I'd have eaten the whole batch!
I had to sub in chedder as I had no jack. I'm now going to pull out the peat pots and get the zucchini started!

I'm glad everyone likes it, it's a simple enough recipe and by growing your own zucchini... it's really cheap to make. I like curry and I think the curry mayo really sets it off.
