When we were at the Washington State Gathering last week, I promised Peter H I would post this on the forum. So here it is - enjoy.

Oriental Salad
This is by no means an exact science! You can adjust various ingredients and amounts. But it's really the sweet/salty/crunchy thing going on that makes this good.
Broccoli Slaw
1 Package Broccoli Slaw Mix
2 Packages Ramen Oriental Noodle Soup Mix
1 Cup Toasted Slivered Almonds
1 Cup Sunflower Seeds
1 Bunch Scallions, chopped
1 Small Red Pepper, chopped
1 Cup Dried Cranberries
Dressing
2/3 Cup Vegetable Oil
1/4 Cup Sugar
1/3 Cup Rice Vinegar
1 Packet of Chicken Stock Flavoring from Ramen Noodle Packet
Break up the Ramen Noodles and mix with other ingredients. Mix up dressing and pour over and mix.

My sister just made this recipe for her daughter's graduation party...only difference was she added shredded chicken....For some reason, she called it "Chicken Simon Salad"....it IS wonderful!!

I made this today for a backyard bbq/birthday party. None of us like brocolli and yet we all loved the salad.
Instead of cranberries, almonds and seeds I just used the trail mix that I had handy. So we had cashews instead of almonds and some raisins as well as the cranberries and seeds. Amazing stuff.
