Hello to all you campers who left the sunday brunch with a full tummy.

Here is my whole grain pancake recipe:

1 cup whole wheat or whole grain flour
1 tablespoon brown sugar
2 teaspoons baking powder
1/4 teaspoon salt (optional, I usually leave out)
2 teaspoons ground flax
1 egg
3/4 cup milk, cow, soy, goat or rice milk

Blend all dry products in large mixing bowl
mix milk and egg and add all at once to dry products
stir until just blended. Do not over stir
Heat griddle until water just spits when dripped on. Low heat is preferable to high heat.
Pour about 1/4 cup of batter for each pancake onto griddle or cast iron fry pan.
Flip pancake over when bubbles appear on service than cook until brown.

Serve with "real" maple syrup, real butter and a good appetite.

When mixing batter blueberries or sliced apple can be added. If this thickens the batter carefully thin with added milk.
