Merry CHRISTmas to everyone. Here’s looking forward to an active year of traveling and meeting up with old and new friends along the way.

And, Merry Xmas to you:

In the Greek alphabet, X is the symbol for the letter 'chi.' ... In the early days of the Christian church, Christians used the letter X as a secret symbol to indicate their membership in the church to others. If you know the Greek meaning of X, Xmas and Christmas essentially mean the same thing: Christ + mas = Christmas.Dec 7, 2014

Happy Holidays to you and yours also. By the way I must be one of the few people in the world who actually doesn't hate fruitcake (when I grew up we didn't have much so anything sweet was a treat lol)

Yeah, I don't hate fruitcake either...I make a pretty good one--but I leave out the dark green cherries. Somehow, they don't look right to me.
Having learned to make it (out of a number of 100-year old recipes mixed and matched), I also learned to eat it. A cook's gotta taste the food.

My sister says there's only one fruitcake in the world, and people pass it on to the next person so fast that there appears to be 7.6 billion of them each year. That's one hot potato--so to speak.

We also love fruitcake. When my Mom stopped making it, due to her age, I started. I do not use the candied fruit. All dried fruit and nuts, soaked in rum for 2 weeks. We love it. I make one for Mom now, In-laws and a friend whom also loves it.

If, like me, you don't have the time to make fruit cakes from scratch I highly recommend the ones made by the Trappist monks. These are as close to home made you can get but they do use the candied fruits:

Thank you for the info/link to the Trappist monks. It sounds really good and $35 isn't unreasonable considering what it costs to make them--and we'd never eat by ourselves all that one batch makes. So all we'd really "need" is one fruitcake for ourselves.

They do use walnuts. I'm allergic to walnuts so I use pecans. I don't know why that's okay but it is. Also currants, fruit but nothing green, dark and light raisins, chopped dates, and I, too, bake it slowly over many hours, over a big pan of water to keep it moist. The only flour that goes into it is what I use to keep the fruit from sticking together. I mix it in my biggest mixing bowl, which is large enough to bathe a baby.

To keep this camping-related, I do not make fruitcake in Peanut. Someone clever could probably figure out a way to make it in a clay flowerpot over a campfire, though, and I bet it would be really good. The spice aromas wafting over the camp area for hours would be lovely.

I know baking it scents the house of Christmas like nothing else quite does.

BEST
