Boler Side Hatch door size.

I am looking to install outside hatches on both sides to gain access to the under-bed storage.

What is the best size or biggest size the hatches should be without causing problems?

It is a little hard to give an exact answer. Part of the sizing issue depends on the frame design of the hatch itself. The other part is what is on the inside (will you need a wood frame inside?)

My suggestion is to get some of those strong (rare earth) magnets and position them on either side of the fiberglass. Take your measurements from there and consider the frame design. The old square style hatches can be cut down and rescrewed to your exact specifications. Modern radius corners are usually ordered with preset sizes.

Mine is a 1984 Boler 13'. I am thinking of either a 16×10 hatch or a 20x13. Both are pre-made radius hatches.

I bought one last year and the largest I could go was an opening of 13x9 ". And the door could only go on the stove/fridge side of the boler without having to relocate too many things. In my case I had to relocate the plastic cover flap to my plug in power cord. For me this was the biggest opening I could go without running into tail light wiring and the curve of the boler. I found mine on ebay from a guy who sells salvaged rv parts. Good luck.
