I have heard that hook-ups like this is call hooking them up in series but I always thought this was done by hooking the Pos. of one battery to the Neg. of the other battery.
Did I hear wrong?

Connecting positive TV battery to positive trailer battery and negative TV battery to negative trailer battery is called connecting in parallel. In the case of charging your trailer battery that correct.
If you were to connect the positive of the TV battery to the negative of the trailer battery and the positive of the trailer to the negative of the TV you kill both batteries and probably burn up wire unless there was a fuse in one of those lines.
You're right about the negative of one battery to positive of another being a series connection. Most flashlights the batteries are in series.
Series connections are used to increase the voltage output. Parallel connections are used to increase the current abilities.
