Foam or not to Foam

We pick up our 1981 Trillium Jubilee tomorrow. I has foam inside that I thinks original. Previous owner painted it blue and it looks fine.
We are wondering what the downside is to tearing it out? It looks a little dated and we are thinking about cleaner lines-painting white-thay type of thing. We are not worried about the work but if the foam serves a purpose we will go with plan B C or D. What have most of y'all done.
And thanks to the site owner-great resource. Be gentle we are newbies!

You are opening up a big project to remove it and replace with something else, as opposed to painting a colour you like. Assuming it is still in good shape.
