How to patch area where bunk bed hinge was removed. And suggestions on cooker placeme

We are reconfiguring our 1977 scamp. The top bunk has been removed and there is an ugly area left behind. See picture. Good husband will dremel this down, but we are not sure how to patch it. Right below this will be the Formica counter top. (BTW, Placing Formica on the plywood was way easier than we thought)

Also, we are having trouble deciding where to place our two burner cooker. Straight across, catty corner, back to front. It might not matter that much, but I'm betting as soon as that hole gets cut we are going to realize we made a logistical error. So would appreciate thought here.

If the older Scamp ensolite wall coverings is the same as that used in the Trilliums I have found that DAP almond acrylic caulk matches quite well to fill screw holes and minor imperfections. It can even be textured a bit to match the elephant skin texture.YMMV
