Mixing Stainless and regular steel parts...

I have some stainless steel bolts for the frame, and I want to use regular steel
bearing plates in contact with the bolts.

I am aware that dissimilar metals cause more rapid rusting due to dielectric effects. Is this worth worrying about in this case? If so, anyone have some workaround ideas?

Unless you have "Graded" s.s. hardware, keep in mind that the nickle/alloys added to make s.s. results in a slightly weaker material. I use graded steel hardware and spray it with "Rust Mort". They can still rust, but usually won't in the 20-30 years I have left.

Those aren't dissimilar metals for the purpose you describe.
Chassis bolts should probably be grade 8... but I'll bet the original body to frame bolts were not. You could add thin plastic washers, or of course you could use stainless fender washers. The body bolts are far more likely to rust through than break. I assume you mean the plate used like a washer on the inside of the fiberglass. You could use a rubberized undercoating after the install.
