Those aren't dissimilar metals for the purpose you describe.
Chassis bolts should probably be grade 8... but I'll bet the original body to frame bolts were not. You could add thin plastic washers, or of course you could use stainless fender washers. The body bolts are far more likely to rust through than break. I assume you mean the plate used like a washer on the inside of the
fiberglass. You could use a rubberized undercoating after the install.
