Hi Terry. I have a similar recipe but it calls for a can of crushed pineapple with the box of Angel Food cake mix. I'll have to try the lemon filling next time. This summer while camping, I adapted it to a dutch oven recipe.
Melt 3/4 of a stick of butter or margarine in the bottom of the dutch oven placed over hot coals. Then sprinkle 1/2 c. brown sugar. Place more crushed pineapple or sliced pineapple over the butter and sugar.
Pour in the Angel food/pineapple (15 oz can) mixture and spread evenly. I usually mix cakes in a large zip lock bag so I can just toss the bag.
Use the correct number of coals dending on the size of your dutch oven and bake for 15 min. Then remove from bottom coals and continue to cook with lid coals until your knife comes out clean (about 10-15 more min.) Use the number of coals for a baking temperature of 350. I use this rule to determine how many coals to use.

The Rule of 3. For general purpose cooking at 300-350 F, the number of coals on top = lid diameter + 3, and the number of coals under = diameter - 3. So, a 12" Dutch has 15 on top and 9 below.

Otters, that sounds really good, too. It is always good to get a reminder on the dutch oven temp control. Thanks, terry r.
