Love the pie but cannot deal with berry seeds? Robert has created a smooth seedless pie that I think is awesome!
Puree 3 cups of berries and press through wire strainer to remove seeds
Put puree in saucepan with 1C sugar and cook to easy boil
Put 2T cornstarch in a small bowl and mix in 2T water to make a lump free thickener
Pour into saucepan of puree while stirring
Cook on low till thicken then remove from heat and set aside
Spray a 9" spring form pan with cooking spray
make cookie or graham crust in bottom of pan
- I like chocolate brownie crisp cookies crumbed in a food processor mixed with 3T melted butter and pressed into pan while warm.
- Alternatively, Nutter butter cookies with a square of unsweetened bakers chocolate and 2T butter
Separate 2 large eggs and leave whites out to attain room temp.
mix 2C sugar with 2/3 C water and 1T
light corn syrup
bring to boil and cook to soft ball stage (140*F)
Whip egg whites with 1/8t cream of tarter or baking powder until stiff peaks form
drizzle hot sugar into egg-whites while beating until all is incorporated (a meringue frosting)
mix Berry Puree into the meringue, poor into spring-form pan, then put in
refrigerator to chill a couple hours
Whip up cream or non-dairy topping. Layer over the berry meringue. Chill until firmly set ( freeze if desired )
run knife along inner edge of spring form pan and then release the spring.
