Broccoli Bowl.

(Feeds 15 - 18) (Half this recipe for smaller groups of 6-8 people)
5 heads fresh broccoli
1 medium red onion
1 pound bacon (thick sliced)
1-1/2 cups raisins (or dried cranberries)
1-1/2 cups sliced almonds (or sunflower seeds)
1-1/2 cups lite mayonnaise
1/2 cup white sugar
1/4 cup red wine vinegar (or apple cider vinegar)
FYI: I already reduced the onion, mayonnaise and sugar from other similar recipes. It seems to work out well.....
Place bacon in a deep skillet and cook over medium high heat until evenly brown. Cool and crumble.
Cut the broccoli into bite-size pieces and cut the onion into thin bite-size slices.
Combine with the bacon, raisins, your favorite nuts and mix well. To prepare the dressing, mix the mayonnaise, sugar and vinegar together until smooth.
Stir into the salad, let chill for [at] 2 hours and serve.

That is my very favorite salad! If I get around to it I'll look up the recipe for pea salad and post it--it's my 2nd or 3rd favorite.

This is THE BEST salad I have ever eaten in my LIFE!! (Sorry mom!)

I'd be VERY interested in the pea salad, as I was born and raised in Michigan, and it's the only place I know of where I can get it!! Never saw it on any salad bar anywhere else!!

hmmmm . . . although she did suggest that you can buy a similar salad at Costco - anyone tried that one?

You need to come out to the Pacific NW, you will find pea salad in almost every grocery store deli!
It is one of my favorites that I make at home too.

Costco's broccoli salad is delicious and EASY -- just dump everything in a bowl and mix together. I've bought it several times now. It's great for potlucks. If Costco stops carrying it, I will definitely try Rick's recipe!

I don't think that this will rival the Okra Thread. The best thing about Brockley is that you can toss it out. Maybe eat the bowl.

I had this same recipe except it was made with broccoli-slaw (broccoli stems shaved thin like coleslaw) and it had brown sugar instead of white. It was really good!
