I pulled this recipe off of www.camprecipes.com and it looks so good, I'm going to try it next camping trip--although I dont know if we could sleep all night with the yummy smells coming from the crockpot
Crockpot Breakfast
1 bag (or 2) O'Brians hashbrown potatoes with peppers,onions and seasoning
1 small can of chicken broth
1 small container of sour cream
1 bag of shredded cheese--any kind
1/2 or 1 dozen eggs
deli shaved ham --approx 1/2 lb
couple of shakes of onion powder, season salt and pepper
Spray crockpot with cooking spray. Pour both bags of hash browns into pot, add sour cream, seasonings, ham and broth; stir well. In a bowl stir up eggs and pour over mixture in pot and then take a spoon and kind of swirl around. Set pot on med. before going to bed. When you wake up, put the cheese over mixture and return lid. As soon as cheese is melted you are ready to eat. Feeds several. Great with toast. I put on picnic table to cook. That way our friends and family from other camp sites can fend for themselves when they are ready.
I agree with not putting it outside--I just copied the recipe including the authors comments.

oooh, I want to park next to you! I think I'm salivating I understand what you mean about how hard it would be to sleep but, ya don't want to leave it outside in Bear Country...that would be like ringing the dinner bell...and I know you didn't mean that

Sound's wonderful. I've printed it and am going to make it the week before Bullards when I'm campingat Tugman with my family. If I make it at Tugman will someone come help me eat it?

Actually, this is delicious. Lee makes it at home and freezes portions to take camping.

we threw the 'ngredients together and set the cooker for 'STUN' for tomorrow a em. Prepared to top it with tex-mex cheese and an extra kick of hot sauce, just for chuckles!!
This one looks like a keeper for future campouts (....one coming up in 2 weekends).

What you left out of the crock pot was the two medium jalapeño pepers finely chopped.

Doug, did you add the O'Briens frozen, partially thawed or thawed? I don't want crunchy potatoes cause they didn't cook all the way...but, don't want mushy ones either.

frozen....., they didn't seem to get too soft but (I think) that also depends how high heat you use or how long you cook the dish for.
Next time we do this (Fire Cracker Run in Ferndale WA in 2 weekend!!), we are going to change up on the meat, either ground beef (J.Dean sausage meat) or chopped (smoked) and pre-cooked bacon.
Only issue I have with this recipe is that NOW we need to add another appliance (slow cooker) to our already overloaded pack list!!!!!

Not sure I'd like the soup in it. But was going to mention that I found small individual milk carton sized cartons of dried hash browns last summer. They are absolutely great for things like camping breakfasts. Like these: http://smile.amazon.com/Hungry-Jack-...ds=hash+browns
