Now about the end of March plant some Roma type tomatoes and some larger ones such as Big Boy. Or a beef steak type, Also Sweet bell peppers, Paprika type peppers, and jalapeño. Peppers. Some herbs .Such as Basil, Cumin, sorghum, black turtle , dark red kidney beans, and cilantro
April you will have to plant carrots, and beets
You won't have time to raise honey so you may want to do as I did and contract with a bee farmer and put several hives on your south 40 for a percent of the harvest.
Along about the 10th of May You can set all of the above out in the garden and plant some sweet corn. Silver queen is best for what you want.
June and July The next two months .all you have to do is weed and keep the varmints from devouring your veggies.
Around the 15th of August pick about 5, - 5 gallon pails of tomatoes,6 or 8 sweet bell peppers ,10 or so carrots 1 celery plant , 2 jalapeños, leaves from 1 basil, 5 or 6 nice big onions,6 or 7 garlic cloves, salt pepper and 1 cup honey. Make this into vegetable juice
Pick a bunch of those Roma tomatoes de skin and pack into pint jars along with 1- 3 finger pinch of each of the following. Chopped onions, sweet bell peppers, and chopped basil one two fingered pinch salt a dash of pepper ,1 tablespoon honey and 1 teaspoon beet juice Process and you have your Stewed tomatoes..
In September Cut your sorghum stalks about now and the next day run them through your sorghum press. Boil the juice down for a couple of days Sorghum molasses.
Pick all your left over sweet corn shell and when dry grind into corn meal.
Now its time to make your Chipotle, Equal amounts of jalapeños Sweet red peppers and Roma tomatoes, cut in half 2 onions and 10 or 12 garlic cloves and put them in your smoke house with dense smoke for 24 hours, grind into a paste and place in a flat cake pan on your wood range and cook until it turns to a dry powder, You will have to run it through the processor several times. Chipotle Powder.
pick those Paprika peppers , Grind and simmer on your stove top until you have paprika.
Pick your cumin seeds and put to dry. When dry, And grind into a powder Cumin powder
Harvest your kidney and black beans By picking thrashing them and fanning them in a breeze. Dry Beans black turtle and large red kidney
Pick around 1 gallon of those roma tomatoes. Run them through the processor and put on the stove and simmer until thick. When you have about 1 quart add 4 heaping tablespoons of the cumin powder.1 teaspoon cinnamon 1 cup of your molasses and 4 heaping tablespoons of your Chipotle. And the same of paprika, 1 cup fine ground corn meal. Mix this all up and process in ½ pint jars this becomes chili seasoning
Put 1 cup kidney and 1 cup black beans to soak overnight. The next morning rinse beans in fresh water and put them in 1 quart of vegetable juice and simmer for about 3 hours or until tender. Add 1 quart stewed tomatoes and 1/2 pint of the chili seasoning. Add about 1 pound of browned hamburger. Simmer and add salt as needed. At this time you can make it as hot as you want by adding more Chipotle.
