Nice Recipe!

Back at you... Here is one my Mom cooked up when i was a kid:

Oatmeal Orange Lace Coconut Cookies

2 cups Flour
1 tsp Salt
1 tsp Baking Soda
1 tsp Baking Powder
1 cup Sugar
1 cup Brown Sugar (packed down)
2 Eggs
1 1/2 cups Shortening (butter flavored Crisco, or real butter)
2 tbsp Orange Juice
Zest of one orange
3 cups Quaker Oats (okay to use quick oats)
3/4 cup Shredded Coconut

Sift dry ingredients together (flour, salt, baking soda, baking powder)
Creme eggs, orange juice, zest, shortening, and sugar together.
Mix dry ingredients and cremed mixture. Add oatmeal and coconut.

Bake in 350 degree oven for 10 minutes for soft cookies, 12-15 minutes for crispy cookies

Only problem with these is that the dough tastes so good it is hard to get to the baking stage.

Enjoy! Larry H

Frederic, wanted to let you know I am eating a cookie my wife made from your recipe. She made the half bach with walnuts and Ghiradelli chips, one cup of each. This recipe is definetly a keeper. Thanks for sharing.

Frederick: Don't halve the recipe!! It doesn't take that much longer to make the whole thing. Put half in the freezer for the next outing! (Hint: they taste just as good when you sneak one out of the freezer)
Anyway, aren't we all teenagers???

These cookies are DELICIOUS! A new favorite at our house. I confess though, I did add a cup of chocolate chips. Next time I might add pecans as well! YUM!
