Does anyone make Birds custard with Soy milk?
(I'm allergic to dairy)

Daisy ,I have not made custard with soy 'cos I don't eat custard, however I do drink soy for its nutritional value and I use it for rice pudding (for Philip of course) and for white sauce so I believe it would make great custard. Let us know if you make it.It may need some more thickening agent arrowroot or cornstarch?
p.s. I think Rick might know as Anyone who has such an extensive Okra recipe collection probably also has used used Soy in his ''Cream of Okra soup''! could you help us out here Rick?:quiet :hiding . I'm off to an appt. now:wave

Soy??
where do I buy soy. I have a lactose/whey intolerant daughter-in-law. wouldn't she be surprised I found something she could eat with out the pills. At Thanksgiving almost everything we made had stuff bad for her and now one grankid. So share some recipes please. :)

here in NE buy it in the supermarket
Here in New England (that's NE, Charles), we can buy Soy Milk in the supermarket. It's marketed under 'Silk' or 'Sun Soy' brands. I buy soymilk from our local Wholefoods chain supermarket (wholefoods is a 'organic' upscale supermarket. Mostly I don't like them because they charge a fortune even for non-organics, but this is something they are actually cheaper on).
I buy vanilla flavored stuff as it has a little more flavor than the plain.
Would rather drink regular milk, but it doesn't like me. Poor Daisy can't even have soy as she's allergic to that.
Pippa, you don't eat custard? That's terrible! You're deprived :o

She doesn't. Almond milk is another possibility and it is not hard to make. But she's wondering about almonds, too.
Rice milk is a possibility.
Inquire about the soy tho - most folks seem to be able to take it.

Milks
I am lactose intolerant, so I used to use the milk that was lactose free, finally couldn't handle that either, so gave it up all together. Goats milk (although it sounds gross) is actually very, very good. I only have it occassionally so that I don't develop an intolerance for that too. Goats milk would make an excellent custard!
What I have found is that people with allergies and intolerances will develop new ones if they eat anything very often. So, if you find you can have something the first time, don't have it everyday and you should be okay. If you stay away from it for quite a while and then have a reaction the minute you eat it, you know it's pretty much a forever no-no.
Since custard does require milk, and the discussion was started here, I thought it might not be too far off topic.

Intolerances
Perhaps my intolerance wasn't actually the lactose, but the cow's milk. Whatever, the goats milk doesn't seem to bother me.

First things first .
I am not intolerant of anything,but having said that, I was sent a marvellous cook book from U.K. and it is Wheat,sugar,dairy products and salt FREE! The title is....
''The stamp collection cookbook'' written by an actor Terrence Stamp and co-authored by Elizabeth Buxton Published by Random House. I must say they appear to be excellent recipes that all of us might use here is an example
''Roast chicken with Okra''it calls for 1 strand of dried Okra,1roast chicken,olive oil garlic,lemon,pepper, canned tomatoes and cilantro.
I kid you not!!Also (drumroll please) Custard!!4egg yolks,1teasp.cornstarch , heat 2 1/2cups goats milk+2teasp vanilla+2tbsp fructose. Bring milk,vanilla to near boil remove from heat and whisk in fructose,lightly whisk yolks and pour milk over whilst whisking,(don'nt boil milk ) Now return all to saucepan and slowly heat ,til thickened. It thickens further when cool.
It may be on the web?

Nathan, I have not watched Delia Smith but I do know of her.She's with the BBC I believe.

Just wondering...
I was just wondering what kind of penetration Delia has in the Canadian market. I have most of her books - brought into the US from various trips abroad (both mine and UK friends coming here).
A great cookery writer.
She's just announced she's retiring from recipe writing. AH well!
