I thought I'd share this recipe for crisp, delicate, almost candy-like cookies. This was a first place winner in a recent newspaper cookie contest. Hope you enjoy. Tom Trostel

Lace Cookies

yields 3 dozen

2 cups old-fashioned oats
2 cups sugar
1 tablespoon flour (not a typo)
1/2 teaspoon salt
2 sticks (1 cup) butter
2 eggs, beaten
1 teaspoon vanilla

Mix oats, sugar, flour, and salt in a large bowl. In a pan, heat butter until very hot and pour hot butter over the dry mixture, stirring until sugar dissolves. Add eggs and vanilla and combine well. Drop by very small spoonfuls on foil-covered pans and bake at 325 degrees, about 10 minutes. 'Dough' will be very thin like cake batter. Foil should be lightly greased or sprayed with Pam. I used Reynolds Release foil when the first batch wouldn't come off regular plain foil.

Thanks Tom for the recipe. It's exactly what I've been looking for. There will be a plate of Lace Cookies available Christmas Eve and Christmas Day in our home.

I was telling a friend about the lace cookies, and my plans to bake them. She says she makes them, then.....dips them half-way into melted chocolate.......

Why only half way? Boy, do these sound great. Now, let me see if I can find these on the forbidden food list for my diet.

Nope, ---can't find Lace Cookies, with or without chocolate--I guess that means I can make them and eat them.
