This recipe is from Paula Dean on the Food Network. And no, you can't taste the cheese.
Chocolate Cheese Fudge
1/2 pound Velvetta cheese, sliced
1 cup butter
1 teaspoon pure vanilla extract
1 cup chopped nuts (pecans or walnuts)
2 (16 oz.) boxes confectioners' sugar
1/2 cup cocoa powder
Spray lightly the bottom of a 9" X 12" pan with Pam
In a sauce pan over medium heat, melt the cheese and butter together, stirring constantly until smooth. Remove from heat and add the vanilla and nuts.
In a large bowl sift together the sugar and cocoa. Pour the cheese mixture into the sugar and cocoa minture and stir until completely mixed. The candy will be very stiff.
Using your hands, remove candy from bowl and press evenly and firmly into pan. Because of the amount of butter in this recipe, pat the top of the candy with a paper towel to remove the excess oil. Place pan in refrigarator until candy is firm.
To serve candy, cut into squares

Hi Chester
Here in California we have a candy that is super. See's Candy. My mom gave me the recipe for See's Fudge years ago. You might want to try this. It's yummy and easy to make.

SEE'S FUDGE
Place in very large bowl:
3 Packages (8 ounce each) Nestle's Bitter Sweet chocolate chips.
2 cups chopped walnuts
1/2 pound marshmellows - cut up
1/2 pound butter or margarine
2 teaspoons vanilla
Place in a large kettle the following:
4 1/2 cups sugar (white)
1 large can Carnation Evaporated milk (Synonymous with “milk” in Canada)
Bring to a rolling boil and boil for 10 minutes, stir constantly. Pour boiled sugar and milk over the ingredients in the bowl and stir until chocolate, marshmellow and butter or margarine are dissolved. This should take about 2 or 3 minutes.
Pour into a greased dish and let set in refrigerator until firm.
Makes approximately 5 lbs of fudge. Enjoy.

This is a recipe for Fantasy Fudge
3/4 cup butter or margarine (1 1/2 sticks)
3 cups sugar
2/3 cup evaporated milk
1 pkg. ( 12 oz.) semi-sweet chocolate chips
1 jar ( 7 oz.) jet-puffed marshmallow creme
1 cup chopped nuts (optional)
1 tsp. vanilla
lightly grease a 13 X 9 inch or a 9 inch square pan.
Microwave butter in a 4 qt. bowl ( 1 minute ) or until melted. Add sugar and milk, mix well. Microwave on high 5 minutes or until mixture begins to boil, stiring after 3 minutes. Mix again, scraping bowl sides and microwave another 5 minutes. Stir in vanilla, chips, marshmallow cream and nuts, pour into pan and let cool. Makes 3 pounds.

This is a great candy recipe for almond butter crunch. (Almond Rocha)
1 cup butter
1 cup sugar
1 tablespoon light corn syrup
1/2 cup coarsely chopped toasted almonds
5 oz. milk chocolate ( Herseys bar) I like semi-sweet dark
( candy bar should be chopped it small pieces )
1/2 cup finely chopped toasted almonds
Melt butter in a heavy 2 quart saucepan. Add sugar. Stir over medium heat until sugar dissolves. add corn syrup. Cook over medium heat, stiring often, to soft crack stage (290 degrees), about 12 to 15 minutes. (Watch carefully after 280 degrees.)
At this point the butter and sugar will turn color (light brown)
Remove from heat, quickly stir in coarse nuts. Spread on buttered baking sheet. Immediately sprinkle chocolate over top; let stand a few minutes. Spread out melted chocolate evenly. Sprinkly with fine nuts. Chill to firm. Break into pieces. Makes 1 1/4 pounds.
PS: We always double up this recipe and still spread it out on a single sheet

This family recipe has with stood the test of time, and even during the depression! The only thing is that you have to keep beating it with a woodend spoon, for 8-10 minutes, but well worth the effort!
MacCormick/Prentice Fudge
2 cups sugar.
3/4 cup milk.
3 tablespoons Hershey's unsweetened cocoa.
2/3 of a stick butter.
1 teaspoon pure vanilla.
pinch of salt (1/8 teaspoon)
In two quart sausepan or larger, combine sugar, milk, salt, and cocoa. Bring to boil, constantly whisking or stirring, and let simmer (a soft, rolling boil). Stir constantly for 8-10 minutes till "firm ball" stage, using a very cold glass of water. Turn off heat and add your butter and vanilla. You can also place the pan in a bowl of cold water for about 5 minutes now, this will help thicken and make the pot easier to handle. Now beat with spoon till so thick you cannot beat anymore. Pour in greased brownie pan. You may also add nuts and/or raisens during this phase. Then cool completely, cut in squares.
For the Hot Fudge Sauce, all you do is boil till it is thick enough for your taste. I take mine off the stove after about 5 minutes, add the butter and vanilla, and whisk till blended, then pour over home-made vanilla ice-cream, or a good quality store bought one. You cannot believe this fudge sauce!!

If this is a contest, here is the winner!
We have never made it, but receive a generous supply every Christmas if we have been good. (We're half-finished this year's batch already).
BUTTERSCOTCH FUDGE
1 pound of butter
1 kilogram (2.2 lbs.) of brown sugar
1 can of Carnation evaporated milk
1 kilogram of icing sugar
Melt butter, sugar and milk in a saucepan and bring to a boil, stirring constantly for 12-14 minutes.
Add icing sugar and beat with an electric mixer for 7 minutes.
Pour onto two cookie sheets and let set.
ENJOY!

Some one mentioned contest.Ohhhhhhhhh.I will have to think on this.Now to be honest,I do have a contest I want to start.This will be down the road a bit as soon as I can make it reasonable failsafe.

I did a web search. Icing sugar has smaller particles than powdered sugar.

Tom has it right. Icing Sugar is powdered confectioner's sugar, normally used to frost a cake, etc.
Incidentally, Des is the eating part of the team -- Diane is the making half. D & D

Very easy, very creamy. Takes about 10 minutes to fix.
3 C (18 oz) semi-sweet chocolate chips
1 14oz can Eagle Brand Sweetened Condensed Milk (NOT evaporated)
dash salt (I don't use)
1 1/2 tsp vanilla.
Combine chips, milk and salt in heavy saucepan. Melt over low heat. Stir in vanilla. Spread evenly into wax paper lined 8 or 9 inch square pan.
Chill 2 hours or until firm.
NOTE: This can be made with fat free Eagle Brand milk
