I used to have this great recipe for a peach spice cake. It was SO good and twice as easy. Somewhere in all my moves in the last 20+ years I have misplaced it. I'm hoping that one of you have heard of it.

The thing that makes it stand out is the fact that the only liquid in it is one large can of peaches. You mix all of the dry ingredients, then use a mixer and blend in the large can of peaches. It is baked in a bundt pan and when done, it's removed from the pan and you drizzle it with a powdered sugar glaze. I think I remember that I used almond flavor in the glaze, but I'm not sure.

Anyone heard of it?

This is not the same recipe, but very similar.

Peaches & Cream Cake

1 can (29 oz) peach halves in heavy syrup
1 package plain yellow cake mix (non- pudding)
1 melted stick of butter
4 eggs
1 teaspoon vanilla
whipping cream

Puree 8 peach halves in food processor. Place cake mix, butter , eggs, vanilla, & peach puree in bowl and mix for 3 minutes with electric mixer. Divide into 2 equal parts in greased and floured pans. Bake for 30 minutes at 350 F. Cool on wire racks for 10 minutes, then poke holes with toothpick and pour 1/4 cup of canned peach syrup over each. Slice remaining peaches and use with whipped cream to ice the layers.

Tom,

If you keep coming up with all these mouthwatering decadent recipies, we may have to reconsider living in California----hummmmmm North Texas, we hear is a nice place to be.

Here's another version

Spiced Peach Cake

2 cans (16 oz.) peaches
1 box yellow cake mix

1 tsp each added to cake mix
cloves
nutmeg
cinnamon
all spice


1 to 2 sticks butter, melt slowly
1 c. chopped walnuts or pecans

Pour 1 can of peaches in rectangular baking dish.
Drain ½ juice of second can peaches, add to peaches in dish.
Do not use leftover juice unless the peaches do not have a lot of juice in cans.
Sprinkle with box of cake & spice mix (yellow or white), and then sprinkle with walnuts.

Pour melted butter over all the mixture and bake at 350º for 30 to 45 minutes until brown. Serve with cool whip, ice cream, milk or plain.
