PUMPKIN PIE SQUARES
BASE
1 cup flour
1/2 cup quick cooking oats
1/2 cup brown sugar
1/2 cup margarine
FILLING
2 cans pumpkin ( 15 oz. each)
2 cans evaporated milk (12 oz. each)
4 eggs
1 1/2 cups sugar
2 tsps cinnamon
1 tsp ginger
1/2 tsp cloves
1 tsp salt
TOPPING
1/2 cup packed brown sugar
2 Tbsps softened butter or margerine
Combine the base ingredients until crumbly.
Press into greased 13X9X2 inch baking pan.
(or use 9X9 and cut all ingredients in half)
Bake at 350 degrees for 20 min. until golden brown.
Beat filling ingredients in mixing bowl until smooth.
Pour over crust and bake for 45 min.
Combine topping ingredients and sprinkle over top.
Bake 15-20 min. longer or until knife inserted in centre comes out clean.
Cool. Store in
refrigerator. ( can be frozen )
