Its nothing fancy.
1 can pink salmon
soda crackers (saltines)
1 egg
pepper
peanut oil
dump salmon in bowl, do not remove the bones or skin. I like the crunch. :lol
stir in egg
pepper (I don't always remember this so can add as cooking)
crumble crackers and mix in enough to make everything stick together but not real dry. make patties about 1 1/2 to 2 inches across.1/2 inch thick
fry in hot oil (if the oil isn't hot, you get soggy patties, not good - hot makes them crisp. the best kind. :yep) fry fast. drain on paper towel.
Now my friend put onions in hers. she also make tuna patties. I haven't tried any of these forms yet, but I'm thinking about it.
So tell me how do you make salmon patties, or salmon anything?

Salmon & cream cheese (serve cold).

I mix salmon & cream cheese, and spread it on bagels (or crackers, or toast).
Usually we garnish with a dash of Tabasco sauce, too.
I've also been known to add a quarter cup (or so) of minced onion to the mix.

salmon
mayo
green onion
black pepper
fresh bread - toasted.
tomatoes
lettuce
chedder cheese.

Salmon Patties
My pattie recipe matches Jana's, though like her friend I add onion. The secret ingredient for me is a squirt of lemon juice. Just seems to add something.

Ever since my MOM used to make me eat Salmon Patties, I always donate my CANNED SALMON to our Church Food Bank.

That's right boys, so Mary, tell them to can it. :lol.
actually I don't care if the recipes are for canned or on the hoof I mean fin. got some dehidrated salmon some where. brother sent it to me from Idaho. or was it when he lived in Alaska? anyway, I'm afraid to open the pouch. :lol. so I just keep packing it and moving it from house to house.

Keith, My mom always called 'em ''croquettes'' (which always confused me because of the game, ''croquet''). I never much cared for those, either (don't tell her).
But salmon & cream cheese = yum!

Mary F,
We just ran out of smoked salmon. I bought 40 lbs of fresh Atlantic salmon a year ago and smoked it over alder wood (Albertsons had a sale for $1.99/lb).
You just let me know when you're coming this way and I can smoke up some more. :) Of course, you have to furnish the cream cheese.

Smoked salmon - oh man! The absolute best salmon I ever tasted was some
native smoked salmon we were given one summer working north of Terrace
in B.C.

I buy mine - or have what I catch smoked,by a lady on the reserve near Qualicum Bay. She's got over 30 years of serious experience behind her.
Current favorite is Garlic and Pepper.....mmmmmm ;)
FYI: The best salmon to smoke is PINK SALMON (it's also the cheapest), it's not as oily as Sockeye, etc.
