SAWMILL GRAVY CAMP STYLE
Up around 5 fill coffee pot with water and put on gas grill get the fire going Get out about 3 pounds fresh ground pork [Fresh meaning unseasoned ] Mix in 3 heaping tablespoons of premixed seasoning
4 tbs salt
1 tbs pepper
1tbs sage
1 tsp ginger
1 tbs nutmeg
1 tbs thyme
1 tbs hot pepper
3 tbs brown sugar
1 cup powered milk
Place in Dutch Oven and brown. [ don’t break up too much leave nice bite size chunks.] Coffee water is boiling so throw in 2 handfulls coffee. Chop 1 onion Drain excess grease from pork and throw in onion Now theys a fancy French word for this 'SAUTEY' but we ain’t in France so cook just until transparent. Add 3 quarts whole milk Now your coffee is more than likely done so stir up 2 eggs remove from gas fire and place near wood fire and pour in beaten eggs [this will gather the grounds and sink to bottom of pot]. Now would be a good time to check gravy for salt and adjust. In 1 quart milk add 1 cup flour and another 3 tablespoons of the sausage seasoning. Start adding this to gravy. Meanwhile Slice thick homemade bread and place on grill to toast. Keep adding thickener till the gravy is real thick. Put a pan on as some folks like eggs with this not me! an extra toast with chunks of hard butter with blackberry jam on the side. Serve this over the Toast with plenty of hot coffee and chilled homemade vegtable juice.
