Tamale Pie
1 1/2 lb ground beef
1/4 onion (diced)
1/2 tsp minced garlic
Packet Lawrys taco seasoning
1/2 c. cheddar cheese
1 can diced tomatoe (drained, 14 oz, mexican style if you can find it )
1 can Stewed tomatoe (drained)
1 can corn (drained)
1 can olives (drained, cut them in half )
1 can Marie Callendars corn bread mix

Garnish:
Sour Cream
Cilantro

Preheat oven to 375

Brown ground beef, half way through browning add the onion, galic and
taco seasoning. Drain fat. In mixing bowl mix all ingredients,
except corn bread mix. Then put the mixture in a casserole dish. Prepare
Corn bread mix like it says on the can. Pour it over the mixture so it
just covers the top. Don't do it too thick. You'll have extra just put
it in a muffin tin and bake it. Bake your casserole for about 35-40
minutes. You'll know it's done when the top is golden brown. Put a
dallop of sour cream on the side and cilantro to taste.

This is good too, when/if you have leftovers, serve the tamale pie mixture in warm flour tortillas. Don't forget to add some sour cream and cilantro.

That looks delicious, now, if some generous helpings (and maybe a cold beer) could just be delivered to Mike he might feel like taking a siesta so he would wake up refreshed in the morning. Then after being inspired in church he might feel more like tackling this mess.
