Three, Two, One, Cake

These individual little cakes are amazing and ready to eat in one minute! They are perfect for whenever you feel like a treat without all the fat and calories that cake can have.
Ingredients
1 box Angel Food Cake Mix
1 box Cake Mix... any flavour
2Tbsp Water
Makes one serving

Directions
In a large ziplok bag, combine the two cake mixes together and mix well. for each individual cake serving, take out 3 tablespoons of the cake mix combination and mix it with 2 tablespoons of water in a small microwave safe container. Microwave on high for 1 minute and you have your own instant individual little cake. KEEP the remaining cake mixture stored on a shelf in the ziploc bag and use whenever you feel like a treat! You can add your own favorite topping if desired.

Helpful Tips
This recipe is called 3,2,1,Cake because all you need to remember is
3 tablespoons mix
2 tablespoons water
1 minute in microwave.

Just remember that one of the cake mixes MUST be an Angel food mix. It is the one with the egg whites already in the mix. The other can be any flavour of your own choosing.

Right! I tried it out today before posting and my wife thinks I'm a genius. Now to try it in some muffin paper cup liners to see if it is camp friendly.

I prefer pie versus cake. If you come across a quickie pie recipe as easy as this, let us know!

mike.....an easy pie recipe involves using a pie iron, 2 pieces of buttered bread and some pie filling. simply spray the inside of the iron with no-stick spray, place one slice (butter side out) into the iron...spoon some filling...place the other slice butter side out....close the iron and toast over the fire for 2-3 minutes each side....yum.

UPDATE

Using a large sized muffin tin and papers, I multiplied the mix by 6 and added one more tablespoonful to the pot. [just seemed like a bit too much liquid]
With the oven set at 350 I let them bake for about 20-25 minutes.
They won't last long.
In the spring or when it's not so *** white outside I'll try them in a pot on the BBQ.

James,
Thanks for sharing that. It's the best idea since sliced bread! I've been racking my brain for a way to make individual cakes for some time now. I'm on my way to the store right now to get the cake mixes :-)

This sounds as fun as Ziplock omelets! Just added cake mixes to my camp list. Swore I would not cook while camping, but you are making it a temptation.

I've been making these little puppies for over a week now. I use a Pyrex custard bowl for each cake. I cool them off in the fridge then ice them with a butter icing. We have them with our afternoon coffee/tea. Not great for the waistline, but better than the temptation of a whole cake or box of cookies!

Here's a great, quick and easy muffin recipe that is really good for you.

Muffin in a Minute

1/4 cup ground flax
1/2 tsp baking powder
1 tsp cinnamon (or more - to taste)
1 tsp sweetener (or brown sugar, if you prefer)
1 egg
1 tsp butter (you can use less, or leave it out altogether)

Stir it all up in a coffee mug, or equivalent sized microwave safe cup. Pop it in the microwave for 1 minute (a little it longer if you add berries, etc.)

You can add some berries, dried fruit, nuts, a little diced banana, chocolate chips, or whatever you fancy.

I now carry a plastic jar (ate the peanut butter first) with the mix. In camp I add enough mix to fill a small tinfoil dish

And place that in a covered pot on the bbq and check it about every 10 minutes or so. Works pretty good.
