time for peaches

The peach cobbler uses canned peaches, great for camping, but could be easily adapted.


Peach Cobbler

1/2 c - butter
1/2 c - sugar
3/4 c - self-rising flour
1 c - milk
1 (29 oz.) can - sliced peaches in heavy syrup, drain and reserve syrup

Put butter in a 9" x 13" baking dish; place in oven to melt butter. Stir sugar and flour together and mix well. Slowly add milk and continue stirring to prevent the batter from lumping. Remove baking dish from oven and pour batter directly over butter (do not stir). Spoon drained peaches on top of batter, then gently pour
syrup on top. Bake at 350° for 55 minutes or until golden brown.



Martha's Peach Dumplings

4 lg, ripe peaches
2 pkg - crescent rolls
cinnamon
sugar

Syrup:
2 c - water
1 1/2 c - sugar
1/2 c - butter

Peel the peaches and cut each one into 4 pieces. Divide the rolls into triangles. Roll the peaches up and place into a 9" x 13" pan. Bring the syrup ingredients to a boil. Pour over the rolls. Sprinkle with cinnamon and sugar and bake at 350° for 30 minutes.


Peach Crunch Cake

1 qt - peaches, with juice
1 - butter pecan cake mix
1 c - coconut
1 c - chopped nuts
1/2 c + 2 Tbsp - margarine, melted

Put in a 9x13" pan in order given. Pour melted margarine over top and bake at 325° for 55 minutes.

Anyway it's made I like peach pie, cobbler, etc.

EXCEPT for coconut. Me hates coconut.

On our recently completed trip to the Carolinas we picked up some super-fresh peaches. While we were hunkered down at Calhoun Falls State Park (SC) in a massive thunderstorm, Dorothy made some delicious fruit compote on the stove while we watched a DVD on Popcorn Sutton and 'Shine whist relaxing on the back couch and sipping wine (*sigh* no moonshine!). With yogurt, it was wonderful at breakfast. The next night she made some cobbler with it.
