Everyone should keep in mind that, when they advertise vacation plans, that they are posting that their house may be empty and unattended for x number of days.
This is not to different than posting email addresses and phone number on-line, everyone is watching, including the bad guys.

They age the cheese in the cave, the tour guide will show you where. You can buy it in the shop at the visitor center. Between that and the smoked cheese from Hogback Mountain in VT, it's a toss-up to see which disappears faster around here! I still don't eat a lot of animal products, but cheese is my weakness, and vegan cheese is an abomination. We have a local Amish cheesemaker, their horseradish cheddar is my favorite snack with a couple of big-boy sodas on a Friday night.

I wish there was an Amish cheesemaker around here! We used to live in St. Lawrence County in northern NY, and the Amish had a plant there that we could get fresh curds from. Yum, yum!
We'll probably do the cavern Sunday. We can't check in till 1, so we'll get prepared Saturday a.m. (the trailer needs to get washed badly!), then take our time and mosey over. It's about an hour's drive from where we live.

Frank, if you're ever headed down 81, exit 230 in PA (just over the border), on the east side of SR 11, just south of the exit is a grocery store called Rob's Market. They carry the Leraysville cheese, block and curds. Easy to get to if you're passing through. Also in the same plaza is Tedeschi's Restaurant, pretty good Italian food if you need a meal.

We do head down I-81 from time to time, and I will file this info away. In fact, it may call for a special trip, as cheese curd is not found around the Albany area.

I like mild cheese, so fresh curds taste great to me, too. Best curds I ever ate came from the little cheese plant near my sister's house in Rudyard MI. Unfortunately they closed the place not long afterward. So many of these little places used to exist, now long gone. Most if not all of the regionally-well-known Pinconning cheese (which I grew up on) isn't made in Pinconning any more, either.

lucky you....I grew up fairly close to there....haven't been back since I moved to Calif....a great place to visit and not far from Cooperstown...
