It's a good idea to read the Owner's Manual about towing in OD -- There are a lot of different transmissions out there and general rules of thumb don't always apply -- One thing all agree on, however, is that if the trans is"hunting", it's time to drop down a gear, be it in OD or something else.

Manual trans doesn't need cooler because it just isn't as fragile and prone to heat damage.

Might have to check into this. Subaru is a very good car.
Actually the newer ones do better than that.
My 07 Outback Max towing (lb) 3000 and it is just the basic 3.0 model

The 3.0 is the 6 cylinder model and it has the largest towing capacity (I believe) of their vehicles.
