Hey, Nancy, do you want us to bring a couple of dozen eggs for the Sunday breakfast? There is a local lady who has the best brown eggs.
And Byron, I think we will be dutch ovening for Saturday night. Maybe lasanga or strogenoff I think. Nice and easy and makes lots of food.

Just think, four weeks to the day we will be in the campground with our pots cooking wonderful suprises and visiting with treasured friends. Four more weeks. Wow, that seems long and short both.

We had rain at the last one so the odds should be in our favor and since it's getting the bad weather out of its system now, we should have nice weather for the NOG. And if enough of us bring our easy ups it should be nice and sunny.

Spent last weekend at Cape Disappointment. Woke up Sunday morning to about 3 inches of wet heavy snow - what a surprise! Easy up was sagging and twisted. Took quite a bit of doing to get it collapsed enough to put in the dumpster (along side the awning someone had already stuffed in). Looking forward to some sunny days at the NOG.

I have a hand crank ice cream maker we could put to use! MMM fresh ice cream. Working on the name tag today. Can't wait to go camping. Took the Scamp to the car wash for a good soaking to test for any new leaks, think I have all the current bugs worked out. Later Brandy

We made a dish for the historical dutch oven cook out at this park last year and it was wonderful. It would have been even better with home made ice cream but for those two dished, the apple dish and the ice cream it will take some help. It takes our two apple pealers, people to run them and a ton of apples, a ton of brown sugar and butter, and I know that cranking ice cream takes a few people. But it would be better than good, it would be just the thing for a cool day, or even a warm day.
I think a pie would only serve about 8 but this receipe with ice cream would serve about 30. It would take a full bag of apples. I am searching for the receipe now and will post it when I find it.

I inherited one of those apple peelers I could bring along if it helps. The ice cream is super easy, someone see's you hand cranking that thing next thing you know its in there arms and they want a crack at it, kind of addictive sitting there twirling that handle waiting. Brandy

We have an electric ice cream maker which we could bring to supplement the quantity if we get serious about making this feast. It isn't as fun as a hand cranked unit, but would add a few extra servings. If the Dutch oven apple dish is too much to accomplish, we could go back to Linda's original suggestion with hot fudge topping. I have a killer recipe for that which is very easy to make for a crowd and I would be glad to bring...

We can leave the choice to others. If they want apple crisp I have no problems making it. Very rich with a pound of butter and cups of brown sugar. Or very rich hot fudge. I am happy with either. (Either one, for us is two more miles of bike riding to wear off the calories.)

We make ice cream almost every camping trip. Our rule is, if you want some...ya gotta make it yourself. It is actually really easy and only takes a few minutes. All you need is:
1 gallon freezer bag
1 pint zip lock bag
half & half
sugar
vanilla
rock salt
towel or hand towel
whatever flavorings you want in it (crushed up candy bars, fruit, ???)
Put some ice and generous amount of rock salt in the freezer bag.
Put 1/4 cup - 1/2 cup half & half in pint zip lock bag.
Add a bit of sugar and dash of vanilla (you may think that I know how to cook by my use of this terminology...but don't be fooled...I cooked one of my bachelor specials for my wife just after we got married and she hasn't let me cook since...almost 10 years and counting...at least I did something right).
Add your other flavors and seal the little baggy.
Massage the little baggy for a few seconds to get the sugar to dissolve.
Put the little baggy in the big baggy and seal the big bag.
Wrap it all up in the hand towel and shake it for about 2 minutes.
You want to be sure to wrap it in the towel while shaking it 'cause it gets darn cold.
Anyway, shake until you get it as thick as you desire and then enjoy some awesome home made ice cream. The kids love it and a couple of one gallon bags will serve quite a few people as they (and the ice) can be reused a lot.
I don't remember the exact amount of the ingredients, but the recipe is in the trailer (along with the bags and rock salt).
Just a suggestion if people want to make this real simple.

Isaac,
What a great idea! Do-it-yourself ice cream and fun besides! The recipe is the same as I use in my electric ice cream maker...half & half, sugar, vanilla and whatever else. Lots easier than cooked custard to start with and not quite as many calories as whipping cream. Thanks for sharing.

On a more serious note - Dave wanted to let folks know that on Saturday from 2-4pm there will be a program at the Park Center 'Chautauqua at Champoeg, Place and History: In Search of the Pacific Northwest' Free if you are camping at the park.
