The Dutch Oven workshop will be Saturday afternoon, starting at 2:00pm. We'll be discussing equipment, tools, fuel, tips and techniques, followed by a hands-on making of a separate recipe for each Dutch Oven. The food should be ready about 5:00, at which time we'll enjoy a sampling of all that you have cooked.

We will contact each of you who sign up to match you up with a recipe that fits your experience and interest. You'll bring your Dutch Oven, the ingredients for your recipe, some charcoal, and be ready to have a good time. If you don't have a Dutch Oven, and want to participate, you may be able to borrow one for the class.

Mike and Lori
We would like to participate. We have two---a 10" and a 12" but have never used them. Please let me know what to bring in addition.

I am interested in attending this workshop. We purchased a dutch oven some five years ago, and have yet to season it. I have been saving bacon drippings, and will season it before the gathering. Note: This is our first gathering; and we are looking forward to it.

Jim Williams and Linda Clary would like to participate, again. Which recipe you could like us to shop for and then prepare? My email is Linda.clary[a]mcsi[dot]net.

We learned soooo much last year and want to return for additional lessons, good friends and great food. Thank you for doing this year after year.

Hi Lori,

I hope I'm not too late. Just heard about all the definite workshops when we received the Oregon Gathering Info e-mail yesterday. In anticipation I just inherited a 12" DO from my aunt just last week - what luck! This is our first Oregon Gathering and we're sure looking forward to all the activities and workshops - eggsactly what we need!

If I can still get on "The List" just tell me what to bring.

Thanks,
Ellen Tresidder

ps - I think my DO is seasoned but would you want to give us newbies some tips in case we need to do some seasoning before the big event?

Hi Mike and Lori,
We saw your list and think the Jim and Mary Clary is us, but we're the Carters. We noticed a Clary towards the end of the page. Putting this class together has got to be over whelming to say the least.

We have a recipe we have chosen. Do you want us to e-mail it to you or just tell you which DO cookbook we found it in so you will know the cooking time? We chose Baked Ziti in the "Lodge" cookbook. Are you familiar with this?

That's about it for today, and we can't wait to do the "Cast-iron Chef" once again.

Hi Mary,

With 21 Dutch Ovens and over 35 people, you can imagine the logistics.

The goal of the class is to demonstrate a wide variety of cooking techniques, skills, and procedures. As you can imagine, timing and having everything come out at the same time is some of the magic Lori can demonstrate while having everyone work together and learn EVERY recipe. It is absolutely amazing.

That said, Lori has a wide variety of recipes she uses for the CLASS. I would suggest you email or PM her to let her know your preferences and be flexible for this class.

I think you will find you will be glad you did.

I have posted the recipe list for the workshop (check the list a few posts ago). Each participant will get a copy of the recipe by email. And, everyone will get a small cookbook of all the dishes cooked.

Thanks for organizing this, Lori and Mike. Looks like there will be a GREAT turnout for your workshop!

I thought I might suggest that if anyone has a Dutch oven cookbook, they might bring it. It would be fun to look at the different options available.
