You have a few choices. But can't have all, a 7' external height and 6' 5" internal height and enough sleeping space for a family of 2 or 4, without going to a tent trailer.
If you were like many you can cook outside and get by with being bent over for the short time you would be standing inside the trailer, however there are very few trailers, if any, that would go through a 7' door that don't fold down in some way.
