I towed a 16' Casita with a 6 cyl RAV4, which also has a 3500 lb towing rate and it worked beautifully. I think that's your best option.
If you look for a used one I recommend three sources: The classified section here, same at casitaforum.com, and Craigslist.
And Sandy beat me to it. The fiberglass gathering at Quartzsite, AZ is your best bet for a large number and wide variety of fiberglass trailers. It's held during the first two weeks of Feb.

I just got a 2005, 16’ Scamp with front bath for $8,000.....I am so happy !!!
Was looking for a pontoon on Facebook marketplace and there she was, 25 miles from my house 🥰

My husband and I are new too. We are picking up a 2013 Scamp 19’ fifth wheel. It has a wet bath and A/C. We will be towing with a Toyota Tacoma also. Since it is a fifth wheel we needed to do some alterations in the bed of the truck.

#1 thing I would need to know is how has the trailer been stored when not in use. Best is a garage. Second best is a carport. A trailer left out in the weather will age relatively quickly.

Generally three years old beats the heck out of 11 years old.

I would also contact the factory to find out what a brand new unit equipped like you want, costs. Then you would know how much of a savings you are getting. Scamp has improved their trailers, 2019 has brakes on the 13 for example. Read up on door hinges as they have had sone recent problems there.

I would suggest calling the Casita factory and getting a list of Casita owners near your location. Set up a couple of meetings with owners so you can see their trailers and have some in depth conversations with them about what they like and dislike about their trailers.

Why not check out a BIGFOOT?

I was in the same situation as you, and after comparing the Casita and the Bigfoot, I went with the Bigfoot. It seemed a bit larger inside and quality was a little nicer. Before you decide on anything, check them ALL out.

That isn't the issue. The issue is how hard you have to work to read a post.
That's why there are typographic rules. That's why there is a certain amount of leading between the lines you are reading now.

I tow a 1992 16’ Casita freedom deluxe with my 2018 Tacoma. It would fit what you are looking for nicely since it is designed for one or two people. I have the 6 cylinder Tacoma with a 6500lb tow captivity. Does the 4 cylinder include the tow package with a transmission cooler and oversized alternator? If not be sure to watch those temps towing at elevation in Utah. If you happen to be up in Northern Utah I can give you a tour of our casita.

Leading is a term originated by typesetters for line spacing.

In the days of hand set lead type for printing things such as newspapers, a strip of lead of a specific thickness was inserted between lines of type to increase line spacing.

On a typewriter you would have single spacing and double spacing, etc.

Capital letters were in a case above the non-capital letters, hence capital letters were called upper case by typesetters and the name stuck.

My Casita 17 towing experience

Zach,

I owned a Casita 17 Spirit Deluxe for 14 years. During that time I towed it with a Dodge Durango (easy peasy) , a Toyota Sienna AWD, a Jeep Wrangler Unlimited and a Toyota 4Runner. All with electric brake controllers (don’t leave home without one). I stopped using the sway bar after the first few trips with the Durango. Didn’t use it with the other vehicles ever and never felt like I should have it.

My wife and I used it most of the time and it was comfortable enough. We learned to do what we referred to as the “Casita Dance” over the years. When I went solo it was comfortable with plenty of room.

I have no experience with Scamp or Escape but understand they are well made units.
