If you have a top winder type jack, your knuckles are definitely in harm's way.
A sidewinder, not so much.
I haven't seen a drive nut work on a top winder, but I think it is worth the $35 to switch to a side drive.

Your mod to the handle is a great idea, with or without the knuckle problem, in fact I did a similar mod myself. I simply removed the stock handle (one roll pin) and replaced it with a piece of drill rod with a nut welded on as you suggested. I do recommend having a wrench handle to manually operate the jack as a backup.

Floyd ..nice trailer

Floyd,

I really like the look of a wood inside. Great trailer you have there.

How is it holding up after all of these years?

Twelve years many tens of thousands of miles and hundreds of nights of use, the interior is still in excellent condition.
Once a year we wipe it down with Old English or Pledge wood protectant to maintain the finish and do a thorough cleaning inside and out.
I have replaced the kitchen area flooring with laminate which gets waxed about once a year.
Still proud to show it and expect it will last as long as we need it and longer.
