You appear to be confusing different weights and limits. The four you need to be most concerned about are:
- Tow rating: This is the maximum total trailer weight (tongue plus axle), including the empty trailer (which is around 2500# in your case) plus everything in the trailer. That averages around 3000-3200# for a loaded Casita 17D.
- Tongue weight rating: This is the maximum weight your vehicle can carry on the ball of your fully loaded trailer. For a Casita 17D, it averages around 425#.
- Gross vehicle weight rating (GVWR): This is the total weight of the vehicle and everything carried in or on it, including the tongue weight of your trailer. You should be able to find the GVWR on a stacker on the driver's door jamb. You will also find the OCC (occupant and cargo capacity) which deducts the curb weight of the empty vehicle. It's how much you can add, to the vehicle (including the hitch and tongue weight of the trailer).
- Gross combined weight rating (GCWR): This is the maximum total weight of the vehicle, trailer, and everything in both. You will probably have to look in the towing section of your owner's manual for that information.
So in your case, people, pets and gear in the tow vehicle count against the GVWR and the GCWR, but not against the tow rating. There's more, including separate weight limits for each
axle. Towing can sometimes overload the rear
axle of the tow vehicle.
Here is an excellent tutorial on towing terminology and practices.

The towing section of your owner's manual will also have information that's specific to your vehicle. If you are shopping for a vehicle, you can download and read the manual for any vehicle you're considering. Don't depend on what the salespeople tell you. It may not be the whole story.
