Propane Pressure a Moving Target

I tested my pressure at the fridge burner, and it was around 11.5". So I dropped it down, by adjusting the regulator, to 11". Everything was great all week but then my fridge was working especially poorly Friday so I checked again, and it was 11.69".

What's up with that? Would altitude play a role? When I last adjusted it, it took...oh I don't remember but maybe a half turn to get it from 11.5 to 11. This time it was over a full turn, down from where I already had turned it to before.

My stovetop and water heater still work fine.

I'm testing at the fridge test port.

I suppose I should test somewhere else along the line so I'll take that advice before you even give it.

But what's up with the ever-changing pressure?

Preasure

Your lp preasure will drop as you use it. and tempture is i big factor .at -40 lp presure is around 0 lbs .as for the fridge it might have other problems .most comon is a dirty burner . i put cooling fans in the back works great.

Altitude, temperature and other appliances can all create issues. Are you lighting all your appliances and then checking the gas pressure at the fridge?
If you are worried about it seek help with a propane professional.

I'm just connecting the gauge to the test port in the back of my fridge, then firing up the fridge and seeing what it reads. "Problem" is, out here the day/night temps vary by easily 30 or more degrees, and the difference between camping in town during the week and camping in the mountains over the weekend can be 1,000 - 2,000 feet.

So I guess I should set it for town since it's the elevation I spend the most time at, and set it during the day to capture daytime temp lp pressure.
