Advice Needed to Remove Old Paint

My 77 Beachcomber will be coming into the shop for a total overhaul this winter. Before I bring it in, I want to remove the old rolled-on paint job. I tested the paint using the alcohol method and it appears to be latex.
I bought a stripping product called EZStrip which is supposed to be fiberglass friendly. After trying it out on a small spot it seems to be paint friendly as well!!
Back to the drawing board.Can anyone offer me some advice on what product or method they might have used successfully for removing latex paint from their FGRV?
