Sorry, good question, but I can't help you with glue.
However, since you will be dealing with possible grease and food splatter, might it not be better to have a backsplash that is completely smooth for ease of cleaning? If the backsplash will be wall mounted, it also might be necessary to seal all around the edges (caulk?), to keep grease and condensation from accumulating behind the splash pad.
I don't know the setup of the stovetop in the scamps, but might it be possible to install a flip-up stove-top cover that also serves as a backsplash?
