My plans call for a tall cabinet on the curb side (starboard, or right) that will have a storage locker in the bottom half and the Dometic 211 Refrigerator in the top half, maintaining roof support. The driver's side (port, or left) will not have a dividing wall between the kitchen counter and the bunk on that side. To compensate for the lack of roof support, I have reinforced the sides of the roof opening with scavenged commercial shelving legs that are merely angle steel bolted on the outside to connect the forward and rear top struts on the inside of each side. The the steel braces are painted black, and will be hidden by the sunbrella fabric "boot".

Exactly.

The windows are re-tinted and re-installed with butyl tape.
The spare tire and single propane bottle are mounted on the tongue.
Four car-battery type "J" bolts hook into the holes in the bottom of the propane bottle and pass through the holes in the wheel to connect to wing-nuts below the original propane mount angle pieces.
If you look at the reflection of the hard tank cover you can see the 5" in diameter access hole in it to pass the regulator inside and allow screwing the hose connector to the valve and opening/closing the valve.

I bought a skinny 15 gallon blue tote to use for gray water; You can see it under the trailer in the picture above. I'm designing and putting together a hinged skid-plate/cradle for it to ride in below the floor just forward of the axle, as if it were an installed gray water tank. The bottom of the tote will be at the same level as the bottom of the axle, and the 3' x 3' piece of stainless steel that I salvaged from a discarded scale will protect it.

Rear perspective.
All of the lights (running, license plate, brake/turn, & back-up) are wired to a junction box awaiting the purchase of a pig-tail with 7-pin plug.

The electric port (15 amp, male end) and city water connector flank the side logo. Below is a hatch to access a small storage bin just big enough to hold the gray water hoses for the blue tote and the heavy duty power cord.

I have a 10 gallon fresh water tank and the fill port for it but have not installed either yet.

Found the rock guard way in the back of my storage shed. It's been in there since June 2013 when I bought it from Vintage Trailer Supply. Just checking positioning; I need to purchase some flat stock aluminum to make an adapter to mount it through the top window frame screws so I don't have to drill any new holes in the fiberglass. This will also get the 4th Logo decal on the trailer.

Here are some close-up pictures of the blue tote/gray water tank. It will only ride empty in the cradle; it will come out, sit on the ground, and connect to the drain line for the sink and shower pan near the rear left side of the trailer.
