Look into the eemax SP2412 electric demand water heater. It runs on one 20 amp circuit and we've had it mounted under the sink in our Burro for a few years and it works just fine.

I have the 20amp 120v version of that water heater installed. It works well at making warm water at a camp ground. Nice for washing hands/face and doing dishes. It helps to have a faucet that controls the flow.

We keep the pot on 24/7 , just keep adding water
