Yummy! I always am on the lookout for good camp recipes. I just want to point out that cooking with a pie iron is great fun! Almost any recipe that asks for a foil packet can be made in a pie iron. If you don't use the foil packet in the pie iron be sure the ingredients are surrounded by buttered (on the outside) bread or otherwise protected from oozing. Although my experience with the pie iron is limited I have made a pineapple upside down cake, a one-person s'more (wrapped in foil), and cornbread. Here are some simple pie iron recipes to get you started Easy To Make Pie Iron Recipes. I suggest getting a quality cast iron pie iron. They are available at REI and Eddie Bauer, among other places.

thanks....i love the dutch oven recipes, too. i haven't used the 12" one i purchased this fall at cabella's. i am sooooo excited to try. in fact, i had heard about dutch ovens on this site, but really didn't understand what one was. to me, it was simply a larger pot one used stovetop. never before had i heard of or seen the cast iron kind using charcoal.....but i am stoked to begin.

if anyone has any good hints for me, i'm all ears.

Dutch ovens look great but seem impractical when only two of us are camping. There is simply too much food for two! Does anyone have advice for cooking for two with a dutch oven?

You betcha!

First thing you need to do is downsize the oven... then just cook whatever you'd cook in the bigger one, only less of it!

The one in the pic has legs, and sits perfectly inside the burner depression in my Trillium.

Pork roast with winter vegetables, anyone?

I cook for 2 using a lodge 8". You can do a full meal in one. We use them on all of our trips. Usually cook with briquettes or on a Volcano stove.

That roast looks real good!

I had never heard of a Volcano Stove so I checked out their website. Wow! They look fantastic! You don't need a campfire to cook. You can use charcoal, wood or propane. It's very versatile in that you can grill, bake, cook with a wok, stew and more. It looks like you have a lot more control over your cooking. They show a 12" DO but you suggested an 8". How can I use an 8" DO with the Volcano Stove?

I don't know about the Volcano, but the "pork roast" pic I posted earlier is in an 8 inch dutch oven as Sandy describes, and it was cooked entirely on the stove top in the Trillium.

That small dutch oven size exactly matches the burner cutout...after well- browning the roast with the lid off, I turned the heat down as low as possible, put the lid on slightly ajar, and let it "roast" for a half hour or so. Then I added all the root vegetables I could fit in there (Onion, carrots, rutabagas, turnips, parsnips) and covered tightly for another hour or so. The brussels sprouts went in for the last twenty minutes.

No room for potatoes, a necessary adjunct as far as I'm concerned, so I cheated the first night and we had (gasp) instant mashed! (For camping, I love those packets that you just add 2 cups of boiling water to- so easy, and not bad, either!)

My husband and I got two nights of dinner out of that potful.

We got the volcano stove with the propane attachment and the dome (the cloth/foil "lid" as they call it). Put the dutch oven in the stove with the propane on very low and put the "lid" on over the stove. You have to play with it a bit to get the right temperature but it works great. Quite often my nose tells me when things are done. We have also used Pie Irons with the volcano.

If you are looking at getting a volcano stove, get the cookbook/manual (lots of good info in it) as well as the lid and the propane burner. We have used briquettes, wood in it but do most of our cooking with propane. It is one of our better purchases.

Kim, I've looked for suppliers in Ontario but not found any. However, this company is Canadian and ships for $30.
