a new dutch oven for Christmas
I can't wait till camping season either. I'm so stoked to get using this with coals. just did a pork shoulder - serving pulled pork sliders for a midnight new years eve snack.
so my question is... what's your all time, no fail, favorite DO recipe
the kids want apple crumble next. mmmmm

Line oven with foil, I use 10", spray or butter foil, dump in can of crushed pineapple, spread with can of cherry pie filling, crumble a yellow cake mix over top, chip up and stick of butter over that. Heat from top and bottom 350 degrees until golden brown on top.
This can be made with all sugar free ingredients for the diabetic and can be changed up with what ever fillings and cake mixes you think would be tasty. We just like this the best so far. Apple, raisins and spice cake would be the bomb, too. The possibilities are endless. Terry R

I just re read my post. It should read, chip up a stick of butter. I take real cold butter and try to slice it as thin as possible and that usually ends up more like chips than slices. Sorry for the poor instructions. Terry R.

Favorite Dutch oven dessert
Pear & Cherry Buckle
1 can (26 oz) cherry pie filling
1 can (29 oz) pear halves in syrup, cut into bite-size pieces
1 teaspoon almond extract
1 box (18.25 oz) yellow cake mix
1 stick butter, cut into small pieces
1 packet (1.19 oz) maple & brown sugar instant oatmeal
1/4 cup sliced almonds
Spray 12" Dutch oven with Pam (or grease with Crisco) and set aside. In a large bowl, combine pie filling, pears with syrup, and almond extract. pour into Dutch oven. Sprinkle cake mix over fruit mixture. Dot with butter. In a small bowl, combine oatmeal packet and almonds. Sprinkle over cake mix. Cook for 60 minutes (or until cake mix turns golden) with 8 coals under and a complete ring on the lid.

Favorite Dutch oven side dish
Corn Casserole
1 can cream style corn
1 can whole kernel corn
1 box (8 oz) Jiffy corn muffin mix
1 stick butter
1 cup sour cream
2 eggs, beaten
salt & pepper
Melt butter in the bottom of Dutch oven. Mix all ingredients and pour into oven. Cook 45 to 60 minutes in covered Dutch oven with 6 briquets under and 18 on the lid.

Favorite Dutch oven entree
Hopping John Stew
1 lb. package breakfast sausage (Owens, Jimmy Dean, etc)
4 strips bacon
1 lb. cooked, smoked link sausage, sliced thin
1 onion, chopped
1/2 bell pepper, chopped
1 can diced tomatoes
2 cans (15 oz each) black eyed peas
1 cup brown gravy
Place 10 coals under a 12" Dutch oven and fry breakfast sausage. Remove to drain on paper towel. Fry bacon, then remove to paper towel and crumble. Put everything into Dutch oven and bring to a simmer. Stir and cook for 10 minutes. Serve.

I also spend time over at T&TTT; Dean in CA has several videos on YouTube using his DOs. Having partaken of some of his cooking . . . .well, just thinking about it makes me drool.

Tom Trostel - These recipes sound great but I am a little confused (never having cooked outdoors with one). When you say put coals on the bottom and then on the top...do you mean hot coals...wouldn't they get cold? Or are they to hold the lid on?
Sorry...but what can you expect from a NYC girl?

Did not mean to confuse with the term "coals". I should have said "charcoal briquets". When Dutch ovens are used outdoors and not in the kitchen, the style is a camp Dutch oven. It has a raised rim on the edge of the lid and 3 thin legs underneath. This allows briquets to be placed on top and underneath. For baking, more heat (and more briquets) are needed on the lid to compensate for rising heat lost from the lid. A lit briquet will give heat for about one hour and the numbers in the recipes will achieve 350 degrees. Hope this helps.

Oh, now I see...it is a different type of dutch oven. I have a kitchen but it does not have legs. I think I will buy one of those and try it this summer. One more question...I assume this goes on a BBQ type fire, not a campfire, which would be burning wood.

Mine is a "kitchen" DO, without legs. I bought a camp lid for it and just set it on top of the charcoal briquets. You really must have the camp lid so the briquets won't roll off, but the legs are optional... And of course you CAN use coals from a regular wood fire, but with briquets you have a much better chance of gauging an accurate temperature (based on how many briquets you use). When you are buying that camp lid (or new, campfire style DO), do yourself a favor and also pick up the "lid lifter." It hooks into the handle so you can check the progress of your cooking without burning yourself or your oven mitt/pot holder.
My favorite dish for the DO is cornbread dressing at Thanksgiving, since that's one time every year that I am out camping with a crowd!

Thank you Mary and Tom. I know I sound like a real beginner...which I am! So, if I understand correctly, you make a wood campfire, add briquets and let them get red hot and then put the dutch oven in the campfire and add some to the top. I never realized that briquets or coals went into the campfire...I thought just wood.. So far I have only cooked on the Coleman stove. I will definitely try these recipes when I go to a get together with some friends...will they ever be surprised!! I may even back into the spot myself.
