Gather and have:

Overshopped-food for a shortened trip, including assorted peppers
Pouring rain all night then all day then all evening long

Cooking oil
Cold white wine or too much rum-n-coke

Step 1. Observe husband make a huge big roaring fire in the pouring rain
Step 2. Hear husband comment it's a good fire for roasting peppers, which we have on hand in abundance
Step 3. a) Have a calm grilled-cheese-sandwich night OR Decide to make chili rejenos

Roast peppers on huge roaring fire
Allow to cool (refill beverage)
Assemble batter: egg, flour, pour oil in pan
Slice cheese, put paper towels in plate
Chop tomatoes and onion for salsa topping

Peel charred peppers, allow to cool (refill beverages)
Heat oil in pan
Stuff peeled peppers with cheese, batter in egg then flour then egg then flour
Throw in hot oil

Pay attention!

Turn, turn, turn then put lovely light fluffy veg in paper towels to drain
Put stuffed peppers in middle-sized camp pot (refill beverages -- ONLY AS NEEDED)

Wait til fire is more reasonable
Cover lovely battered stuffed veg with home-made salsa; sprinkle left-over cheese on top
Bake, covered, til salsa bubbles and cheese on top melts nicely

Gossip about your older siblings.
Serve with sour cream and thinn strips of leftover BBQ'd steak from yesterday.

Drive home for 7 hours or more, revisit sibling behaviour, talk about the first camp food ever shared as a couple.

(Recipe may be doubled.)
