Easy Camping Recipes with 5 Ingredients or Less
Check out these 25 camp recipes, for breakfast, lunch, dinner and snacks, using 5 or fewer ingredients! How about quesadillas? How about using clarified butter if you have little or no refrigeration?

Thank you, I expect I will try some of these.
We hike a lot, so we start early and get home late. We are usually really tired. Last season we got into a rut, food wise, so this really helps.
Lunch: Sandwiches
Dinner: Smoked hot dogs
Hamburgers
Chicken
Canned veggies
So...yes... I need recipes
However, this is also what we have found to be very nice, quick and easy, and is my contribution to this post:
1 can of coconut milk
Small jar of Thai Kitchen red or green curry sauce (follow the recipe found on the back)
One or two chicken breasts, sliced and chunked (makes for faster cooking)
Onion sliced, and red, yellow peppers sliced lengthwise
Bag of fresh stir fry veggies (1/2 bag is plenty for 2 peeps)
Minced garlic, if you like garlic (I like the minced in a jar, less mess on the
road), just a bit, don't overpower the coconut milk
Brown sugar (1 tablespoon)
Soy Sauce (save those little packets you get at some Chinese restaurants)
Fish sauce (I like, wife does not)(1/4 spoon, less is ok, but not more)
I sometimes add a bit of shredded coconut, sweetened, to enhance the coconut flavor, but wife prefers I don't.
Brown chicken, add coconut milk and brown sugar, a bit of soy sauce and fish sauce, if you like, cook for 5 minutes.
Add onion and pepper and cook for another five minutes
add veggies and cook for about another 5 to 10 minutes, but still crispy.
Eat as is, or over cooked jasmine rice or rice noodles (which cook really quickly).
To cook rice noodles:
Boil water. add abt half pack noodles. Boil for 4 minutes, then remove from heat and let soak in the hot water for another 6 to 8 minutes or so. Drain. Eat.

I have dried mushrooms from the oriental markets in my kitchen, and can produce a decent stir fry for 2 with 1 pork chop or 1 big /or 2 small boneless chicken thighs PLUS- a handful of shredded broccoli stem (packaged broccoli slaw) and a handful of shredded carrots. The mushrooms soak in hot water for 20 minutes and are good to use. Pad thai- peanut butter, coconut milk and hot pepper. Curry powder with a little soy sauce, corn starch and water. Sweet and sour with some dried reconstituted pineapple, honey or sugar, and rice wine vinegar. Served over ramen noodles or rice.
My backpacking trips with my Scouts introduced me to Backpackers Paella. One 3-4 person serving of yellow rice. I can small shrimp. 1 can chicken. If you got more than 2-3 hungry boys, or 3 hungry adults, add a can of peas. Of course- a SMALL can.
