Mmmmmmm!
On Christine's thread about West Coast Camping (which seems to have morphed into West Coast restauranting), Pippa's comment:
I usually bread the Oysters and cook them with bacon and tomatoes Mmmmmmm!
piqued my interest.
:wave Pippa, how do you cook breaded oysters with bacon and tomatoes?
I mean, we fry oysters, stew oysters, eat them off the half-shell, but have not heard of with bacon and tomatoes. Sounds wonderful! (Isn't that what cholesterol medication is for?)

Oysters and bacon
Not sure how Pippa does hers, but it reminded me of a goooood recipe we've made in the past. Wrap the shelled oyster (which has soaked in some teriyaki sauce) in a strip of bacon, secure with a toothpick and broil for a few minutes. Mmmmmmm!!!!
Wonder how it would be cooked over a campfire, like a shiskabob (sp?).

Hello All, sorry I took so long I 've had a busy couple of days.
Well what I do over the campfire is...Cook the bacon 'til really crisp, I love this part as there is no spatter to clean up! then I drain most of the fat onto newspaper (for the fire lighter next day);)
coat the Oysters in beaten egg and dip into crumbs of choice seasoned to taste and fry for no more than 30 secs each side. fat must be sizzling. remove oysters and quickly heat the thickly sliced tomatoes in the same pan adding a little fat if needed. serve with toast. Not to often though and only when camping!!

That sounds easy enough to do (whether camping or not, except, as you say, if you restrict it to camping, the cholesterol police might not be able to find you). I was wondering how you would mix breading with tomatoes. I think you're onto something wonderful... I can imagine serving with a side of pasta, instead of toast!
Mmmmmmm, indeed!
Which reminds me, one of my favorite restaurants in New Orleans serves their mixed greens salad with a little ol' fried oyster plopped in the middle, on top. Makes a very nice garnish!

O.K. Mary , I have the fat really hot so that the breaded oysters do not make the pan messy, then your toms stay clean, but you can give it a quick wipe then reheat.
However! strange how one thing leads to another, remember the movie the "Green Fried Tomatoes" ?or was it Fried Green ? well in that they used green tomatoes, dipped them in egg and breadcrumbs and cooked them as I cook the oysters with lots of salt and pepper.Great way to use your unripened toms. instead of making chutney.

Oh, it wouldn't bother me for the oysters to mess with the tomatoes! I'll bet it improves them! (Don't get me wrong, I love tomatoes! But that doesn't mean I don't think oysters would improve 'em.)
Yes, I've had fried green tomatoes (and liked the movie as well). We've been known to fix them that way when we couldn't wait for the first tomatoes of the season to get ripe... as well as, as you say, with the last ones picked, before the first autumn freeze (around here, that would be about December 15th. :lol )

Topic is Davis Mtns (TX) State Park, My favorite Thanksgiving destination (which, alas, we'll not be visiting this time around). It's not really a very good picture of either Skip or me, but the scenery's pretty, our flag is photogenic, and I already had the image scanned - it was time to retire the old witch on the broomstick, and I was trying to see if I could make a new av myself - in a hurry.
Plus, I do love Davis Mtns. SP!!

I needed a haircombing... but, what the heck? We were camping!
And, for what it's worth, this was taken a few years ago. We still look pretty much the same, except there are more white hairs on both of us now.

Nope. Haven't tried to see the lights. I've been to/through Marfa (my sister lives in Alpine, just a few miles away; in fact, she and her family moved there, from Tucson AZ, because they fell in love with the area when our families camped in the Davis Mtns.) Anyways, my sister's family has tried to see the lights, but hasn't been lucky. I'll tell her that you saw them. (My nephew will especially be impressed!)
