mmmmmonkey butter!

not a campfire recipe, but one you will want to take along,,specialy with kids along.

real easy to make,,,once you catch the monkey's....just kidding you don't really make it out of monkey.

5 Ripe banana. avoid brown spots
16 ounce can of crushed pineapple, juice and all
1/4 cup coconut flakes
3 cups sugar
1 lemon, juice and zest

throw it all in a big pot and slowly,,,stiring frequently bring iot to boil, then reduce heat and simmer till thickened while stirring frequently. along the way mash it up with a potato masher or stiring spoon with holes in it.
once its good and thickened,time will depend on moisture content put it in sterilised canning jars and process in a boiling water bath for 10 minutes(half pints) to 15 minutes(pints)

add any other fruits you like such as mango for a change up or to customise your own monkey butter.
serve on toast, english muffins, bagels, pancakes, peanut butter sandwiches, pie iron sandwiches, french toast. pretty much anything you like.

monkey butter

John, we have been enjoying our monkey butter immensely...on ice cream! So glad I found this recipe, saves me from having to ask for it. An award that you can eat, now, that's a prize.

John, Thanks for posting the Monkey Butter brew, I'm going to fire up a batch this weekend. I'm still talking about the Algonac weekend. Still havent taken off my prized Scouter Dave bracelet off. Lets do it again next year.

lol yup still gopt mine on. went to joe's army navy and bought a bunch of pink paracord for my grand daughters along with pink clips. and some red white and blue cord. made two for the grand daughters, one for the grand son, and one for my son too. lol, am nursing a blister on my little finger now.
found a nice plan on the internet for an adjustable tying fixture and built it . reall nice to use.
