Not Just for Breakfast

Many of us keep pancake mix as one of the staples usually in our campers. Since it is mostly flour, a spoonful mixed with water makes good gravy when stirred into juice left in the pan after cooking meat.

We also made some good New England clam chowder at a recent fall campsite. Liquid from canned chopped clams and canned sliced potatoes into a pot. To the liquid, add powdered milk, a spoonful of pancake mix, a pat of butter, some dried minced onions, and pepper to taste. Cook and stir until slightly thickened then add the potatoes and clams. Two bowls of hearty soup on a chilly afternoon.

Probably not original ideas, but maybe a good reminder.

That sounds wonderful! We have a Fall rally this weekend, Too bad itís still hot around here. Just canít make soup on a 90 degree fall day. Good reason to go camping next month 😀

Krusteaz buttermilk pancake mix. Just add water, it makes very tender fluffy cakes.

Last nights dinner was pancakes. I made lots of smaller sized one. Then I spread over them some Humbolt Creamery Organic Sour Cream. Best sour cream ever, thick like butter, not the typical soupy stuff stores sell. It has enough butter fat in it that you don't need to butter the cakes.

Topped with sliced strawberries that had been tossed with sugar about 20 minutes earlier.

Then a drizzle of real maple syrup

My friend's response...better than any pancakes at any pancake house he has ever been to. He used to love the strawberry blintzes at Ihop but they quit making them. These are now his new favorite meal treat.
