Pam's Brunch Casserole

Partly because some of you requested it ... and partly because Mary's had more Mmmmmmm's than any two women should be allowed ... here is Pam's Brunch Casserole recipe.

But first, let me say, Pam refuses to let me even think about eating white bread ... no, instead I have to chew through 37 grain stuff in every aspect of my life ... except this recipe. I supposed you no-white-bread folks could substitute other kinds of bread, but I refused to be held responsible for the taste. Besides, part of the fun of making this recipe is sneaking an occasional rolled chunk of white bread.

Let's see, I was going to say something else, but I forgot what it was.

Oh, yeah, the recipe

Pam's Brunch Casserole

I apologize in advance to my metric friends!

Ingredients:

16 slices of WHITE bread, cut off crusts (My job traditionally)
1 8 oz pkg of sliced ham, cut into 1/2 inch square pieces
2 cups shredded cheddar cheese

(mixture ingredients)

8 eggs
1/2 teaspoon salt
1 teaspoon dry mustard
1/4 cup minced onions
1/4 cup green pepper, chopped fine
2 teaspoon worcestershire sauce
3 cups milk
pepper to taste


Grease (with Pam, of course) 9x13x2 inch pan
Line bottom of pan with 8 crustless slices of bread (cut to fit)
Spread on layer of ALL the ham pieces and 1/2 the shredded cheese
Sprinkle layer with red pepper to taste
Layer remaining 8 slices of bread on top of ham and cheese

Mix remaining ingredients in mixing bowl

Pour mixture over top layer of bread, making sure all bread gets covered with egg mixture.

Sprinkle remaining shredded cheddar cheese on top
Red pepper to taste (I like a lot!)

Refrigerate overnight (or even freeze to pull out and cook later).

Preheat oven to 350 degrees
Bake 1 hour
Cool 15 minutes before serving.

Yum, yum.

As I said before, at this point, we also cut cooked portions, wrap in aluminum foil and refreeze. The frozen bricks travel well ... and also help keep the refrigerator cool while egg casserole bricks are thawing).

Sure hope I didn't forget anything ... but you get the drift.

I guess you got my hint - you were tantelizing us but boy my hint worked - this recipe looks great too. A neat idea to be able to freeze, thaw, heat and have a great breakfast.

We make two

Hi C & J ...

I read your earlier "hint" :) :) ... but forgot about it until this afternoon.

Pam and I made up two of these today ... and put them uncooked in the freezer.

All the kids are coming home for Thanksgiving weekend with spouses and significant others ... so Pam'll just be able to pull out the uncooked casseroles and cook some morning.

Pam has me cut off the bread crusts and slice the ham into bitesized little pieces while she mixes the rest of the stuff ... suggest Jim do the same (besides, that way he can sneak an occasion bite of white bread ... man, I forgot how good that stuff tastes!)

Great idea Charles

We have our son and new daughter-in-law coming up Thanksgiving. Also our daughter will be here . Great time to try Pams recipe out.

I'm afraid Jim isn't good in the kitchen - I'm afraid he'd cut himself trying to cut those little bits of ham - but then I could always let him peel off the crust.... that should be safe...

Now I'll run and hide before Jim reads this. (truth though)

I cut the crusts

Yeah, but Carol, I use a knife to cut off the breadcrusts ... leaving perfect pieces of white crustless bread.

Jim could use a dull knife for this!

Although, I gotta admit, over the years, I've gotten pretty good, stacking four slices of bread, then cutting off the crusts with a serrated bread knife.

It's really easy to whip out a couple of casseroles with a team effort.
Besides ... you have band-aids, don't you?
