Pork Chops in Potato Sauce

We are pretty new to dutch oven cooking and still experimenting. Had a big success last night. Didn't hurt that we had a full moon on the lake, a chilly evening, and a warm campfire.

This recipe came with our Lodge Dutch Oven - we scaled it to fit our 10 inch oven for two people. (Actually it made enough for 4 normal people but we filled up and there were no leftovers. In fact, when all was said and done, the dishes didn't look as though they needed washing).

Pork Chops in Potato Sauce

14 inch Dutch Oven
28 charcoal briquettes
1 pork chop per person
1 potatoe for each 2 people, sliced 1/4 inch thin
1 medium onion for each 4 persons, sliced
1 can cream of mushroom soup per 4 people
1/2 can water for each can of soup

Heat 1/8 inch of oil in the DO over the coals. Brown chops on both sides. Remove the chops and sautee the onions. Place the chops back in and cover with onions. Layer with potatos. Mix the water and soup and pour over ingredients. Reduce the coals to about 1/2 and simmer until the chops and potatos are fork tender.

Easy and ... Mmmmmm!!!!! :L

Does sound good!

Why is it always a surprise when the recipe on the box turns out to be great? (It still seems to amaze me, even though of course the folks who print those things are professional recipe testers, right?)

I'm old to dutch oven cooking (having given up on it years ago) but you (and Lori) are inspiring! I'm going to have to get one of those things.

I always used to like to cook outside. Having a real stove in the trailer has ruined me... but I think it can be remedied!

Why cook indoors on a campout (in good weather), when you can do that at home?

Mary,

We like to use our DO at home too - on the patio, unwinding in the evening after work.

We've gotten a little spoiled in the two months we've had the trailer though. This trip, we left the Coleman stove at home for the first time and made breakfast (pancakes) indoors. Gotta admit I enjoyed being inside for a meal. And I don't think we've ever had so much fun washing dishes! Real different from tent camping..... wonder if I'll ever get used to the luxuries :)

This is the pork chop recipe in the making that I posted above.

We really love our Dutch Oven! Cooking with it has added a new dimension to our camping - and our waistlines.

Chicken in Wine and Mushroom Sauce

Used to serve a similar recipe commercially in years past. Exchange pork chops for chicken breasts. We didn't put potatos or onions in, but did add a short slurp of a dry white wine to the Mushroom Sauce. A real crowd pleaser. :cblob
